What is Paella?
Paella is a delicious rice dish that hails from Valencia, Spain and is a must-try when visiting the country. While it's often associated with seafood, traditional Valencian paella actually features meat, such as poultry, rabbit, or pork.
Valencian paella also includes round-grain rice, typically bomba rice, as well as green beans, Lima beans, or other seasonal vegetables. It's cooked in olive oil and broth, and the addition of saffron gives it its signature golden hue.

It's also a versatile dish that often includes a blend of seafood, meats, and vegetables, which can differ from region to region and even from household to household.

Learning how to cook Paella:
When planning my trip to Spain, one of my main goals was to learn how to cook the perfect paella. My boyfriend and I decided to take a cooking class that promised to teach us the history, importance, and techniques behind this special dish.
The class was held in an enchanting outdoor kitchen that was carefully shaded and decorated with twinkling string lights. We were delighted to find that tapas and wine were also included, which made for a fun and relaxed atmosphere throughout the class.
Not only did we get to have a hands-on cooking experience, but we also made friends with other travelers from all over the world.
We spent the evening laughing, enjoying crisp white wine, sharing our travel stories, and savoring the delicious food we all helped prepare. Overall, it was a wonderful and unforgettable dining experience.
Recipe for Paella Mixta:
Ingredients (serves 6):
1 1/2 c. Bomba Rice
6 c. Fish stock infused with saffron
6 tbs Sofrito
6 Chicken wings
1/2 lb Chopped pork rib
1 Squid, chopped
0.5 lbs Mussels
6 Shrimp
1/2 c. Peas
Seasonal vegetables
Olive Oil
Sea Salt
1. Heat a generous amount of olive oil in a pan over medium-high heat. Add the shrimp and cook lightly on each side. Remove the shrimp from the pan and set aside.
2. In the same pan, cook the squid, chicken, and pork until they are lightly browned.
3. Add the rice and more oil if needed. Mix together for 2-3 minutes, then add the Sofrito and mix again.
4. Heat up the fish stock until steaming, and slowly add it to the pan.
5. Add the shrimp, assorted seafood, and vegetables to the pan. Arrange the seafood in a symmetrical pattern if desired. Add a generous amount of salt.
6. After adding salt, do not mix. Mixing at this stage will ruin the texture of the rice.
7. Bring the mixture to a boil, then reduce to a simmer and cook for 17-20 minutes. Rotate the pan at the halfway point to ensure even cooking.
8. After 17-20 minutes, remove paella from heat, cover it with a newspaper and wait 5 min before serving.
Learning how to cook paella was a highlight of my trip, and the end result was absolutely delicious.
Flavors of ultra-fresh seafood blended perfectly with the acidity of sofrito, earthy florals of saffron, and crunchy sea salt. The result was a wonderfully rustic, comforting dish that I couldn't get enough of.
